Flesh firm textured, medium coloured, whitening on cooking.
Moist and succulent, similar to Groper.

Caught around most of New Zealand, near rocky areas in depths of 100-450m

Methods of catching by long line, trawl and mid water trawl.
Becoming very popular in fresh chilled head and gutted, and skinless fillets fresh chilled both in USA, Australia and other developing markets.

STORAGE, HANDLING & DEFROST RECOMMENDATIONS
Chilled Products
  Keep well chilled 0C (32F). Product received whole should have fillets removed to retain fillet quality and shelf life.
Frozen Products
  Best stored at -18C (0F) in supplied strapped cartons to avoid freezer burn/dehydrarion. Recommend cooking from frozen or semi frozen state.
