BACKGROUND INFORMATION
Premium table fish with firm white flesh.
Suited to all cooking methods, fillets are boneless and can be eaten skin on or skinless.

Mainly caught in coastal water of northern New Zealand, east coast North Island.

Methods of catching are bottom trawl and Danish seine.
Landings are constant throughout the year, main season is October to March.
A large proportion of John Dory is exported in whole chilled form.

STORAGE, HANDLING & DEFROST RECOMMENDATIONS
Chilled Products
  Keep well chilled 0C (32F). Product received whole should have fillets removed to retain fillet quality and shelf life.
Frozen Products
  Best stored at -18C (0F) in supplied strapped cartons to avoid freezer burn/dehydrarion. Recommend cooking from frozen or semi frozen state to retain succulence. Do not thaw as fillets are moist.
