BACKGROUND INFORMATION
Densely textured and very white firm fish.
Moist and succulent ideal poaching fish, and a favourite smoked.

Mainly caught around Southern North Island and South Island all year round.

Method of catching mainly longline with some bottom trawl in depths of 200-700 metres.
Pinky skin and eel like features make Ling easy to identify.
Very popular species in Hong Kong, Korea and Asian markets.

STORAGE, HANDLING & DEFROST RECOMMENDATIONS
Chilled
  Keep well chilled 0C (32F). Product received should be in Head and Gutted state then fillets removed to retain quality and shelf life.
Frozen
  Best scored at -18C (0F) in supplied strapped cartons to avoid freezer burn/dehydration. Recommend cooking from frozen/semi-frozen or thawed.
