BACKGROUND INFORMATION
Firm textured flesh, very white with orange tinge on exterior surface.
A true cold water species occurring along most of New Zealand's rocky coastlines however more prevalent in southern waters.
Lobster is caught by potting. The fishery is open year round, however catches have seasonal high and low points. The highest catches tend to occur from October to December.
Most New Zealand Rock Lobster is delivered live to shore-based plants either for conditioning for live export packs or processed into frozen tails, or frozen whole fish.
The Lobster fishery in New Zealand is strictly controlled with a total allowable catch within New Zealand waters of approximately 3,000 tonnes.
The minimum size is set at 54mm tail width for males and 60mm tail width for females.

STORAGE, HANDLING & DEFROST RECOMMENDATIONS

  Live product must be kept away from warm temperatures. Fresh product should be kept well chilled, ie 0C (32F). Frozen product is best thawed to a semi moist state prior to cooking.
