Pacific Oysters

BACKGROUND INFORMATION
Off white flesh, sweet flavour, suitable for eating natural or cooked.
Farmed in most harbours and estuaries of the East Coast of the North Island from North Cape to the Bay of Plenty.

Harvested from April till December each year.

Growing areas carefully monitored for PSP, NSP, ASP, and DSP as well as for water quality by the New Zealand Ministry of Agriculture and Fisheries and the Department of Health.
Oysters are harvested and trucked to the processing plant without delay where they are graded and packed live or converted to a 1/2 shell product which is exported, chilled, or cryogenically frozen to maintain flavour and texture.
