BACKGROUND INFORMATION
Pearly white flesh, medium texture, coarse flakes. Delicate flavour.
Good eating flesh suitable for most cooking methods.

A deep water species caught by trawling in depths of 700 - 1400 metres.

Caught off the east, west and southern coasts of New Zealand.
Main season May to August, but is caught all year round.
Orange Roughy has enjoyed phenomenal success and today is recognised as New Zealand's premium white fillet.

STORAGE, HANDLING & DEFROST RECOMMENDATIONS
Chilled
  Keep well chilled 0C (32F). Product received whole should have fillets removed to retain quality and shelf life.
Frozen
  Best scored at -18C (0F) in supplied strapped cartons to avoid freezer burn/dehydration. Recommend cooking from frozen/semi-frozen state to retain succulence. Do not thaw as fillets are moist.
