BACKGROUND INFORMATION

Full coloured pink to red flesh with high oil/fat content and low moisture.

Found in the north east waters of the North Island and the south west waters of the South Island.
The main method of catching is on long lines.
Fish are instantly killed upon landing (Ikijime process) to enhance flesh quality.
Fish are gilled and gutted at sea immediately after they are caught and placed in an ice slurry to rapidly chill fish.
After slurrying, the fish are placed in muslin cloth to protect skin and packed in ice as they are transported to the factory.
Premium flesh for sashimi.

Fish are firstly graded according to the weight, with a full range of sizes available.

  Other important grading factors considered are the firmness of fish and the shape of fish.
  Fish are packed with ice into an insulated cardboard box.

STORAGE, HANDLING & DEFROST RECOMMENDATIONS
Chilled Products
  Handle fish with extreme care, do not bend the fish.
Keep well chilled 0C(32F). On receival product should be drained and re-iced to retain quality and increase shelf life.
