BACKGROUND
INFORMATION

Full
coloured pink to red flesh with high oil/fat content and low
moisture.

in the north east waters of the North Island and the south west
waters of the South Island. |

main method of catching is on long lines. |

Fish
are instantly killed upon landing (Ikijime process) to enhance
flesh quality. |

Fish
are gilled and gutted at sea immediately after they are caught
and placed in an ice slurry to rapidly chill fish. |

After
slurrying, the fish are placed in muslin cloth to protect skin
and packed in ice as they are transported to the factory. |
